Terroir and wine-making
The Ecrù is a passito Terre Siciliane IGT made from Zibibbo grapes and then infused in wine; this particular production method contributes to make this typical Sicilian wine an extraordinary protagonist among the labels of the island.
In the vineyard of Borgo Guarini, which hosts accurate selections of vines for the production of a collection of Firriato labels of absolute value, the rows of Zibibbo grow in the lush garden of the mattresses: The sun and hot wind heat up the vines, causing the natural withering of the berries for over a month.
This slow ripening process favors the concentration of aromas that we find in the grapes and then in the wine, exalted in the notes of Mediterranean scrub. What makes Ecrù Firriato unique is the infusion that allows you to avoid prolonged or interrupted fermentation, indeed, it gives a particular aromaticity, result of the contact between the berries that swell during the process ceding their richness of scents to the wine.
Notes of taste
The intense golden colour of the glass L'Ecrù tends to be almost amber and shows a richness and depth of aromas that will be confirmed by the other senses. Zagara honey, candied orange peel, dried figs, dates and peach syrup blend in a perfect balance with fresh nuances of bay, lemongrass and oriental spices. Finally, it offers its most intriguing side with hints that are revealed caressing the palate with delicate marine and fruity nuances.
Wine at the table
The most delicious occasion to host the passito label L'Ecrù is a table full of Sicilian sweets: the combination with the classic cannolo creates a blend of excellent flavors that upsets with the unique scents of the Firriato wine.
