Terroir and wine making

The Sicilian territory of Vittoria is renowned for the quality of its wines. Pithos Rosso is produced in this area of south-eastern Sicily characterized by red lands formed by sub-Apennine sands of Pliocene origin. For the production of this wine Cos uses Frappato di Vittoria and Nero d'Avola grapes, which here find the ideal conditions to enhance their qualities. The vines are reared with a espalier system and have an average age of 20 years. The fermentation is spontaneous and takes place in terracotta amphorae on the skins themselves, with indigenous yeasts. The wine goes back to the amphorae for the aging that ends, then, in bottle. All processes are carried out following the principles of organic and biodynamic production.

Taste notes

Pithos Rosso Cos has a classic intense ruby red color and intriguing aromas of pink and violet with delicate hints of cherry jam, followed by a finish of aromatic herbs. A wine that envelops the palate with its velvety softness characterized by freshness and minerality.

Wine at the table

At the table, Pithos Rosso loves the company of tasty meat dishes, aged cheeses and even fish, as long as it has a strong enough taste to withstand a wine of this thickness.

Curiosity

Pithos Rosso di Cos is vinified and aged in amphora: the idea of returning to terracotta comes from the desire of the Sicilian winery to offer unique products that return to nature the original value.
