Terroir and wine making

Pigi Poggio di Bortolone comes from the union of Syrah and Cabernet Sauvignon grapes that grow on a medium-textured soil tending to sandy. The vines are raised with a spur cordon system. Maceration takes place in contact with the skins and lasts about 15 days. After a soft pressing of the pomace, then the aging first in steel for 24-30 months, then in French oak barrels for about 9 months.

Taste notes

The color of Pigi is a ruby red with slight garnet reflections. It conquers the nose with an impact bouquet with hints of spices and fruit, where there are delicate notes of currant and evident notes of ripe blackberry, to which are added the vanilla and toasted ones. The palate is dry and warm, very balanced and with a round finish.

Wine at the table

Pigi lends itself well to pairings with mature cheeses and tasty meat dishes, in particular braised meats. The ideal serving temperature is 18-20 ºC.

Curiosity

The farm Poggio di Bortolone carefully preserves an ancient nineteenth-century palm, a contemporary oil mill that houses an ancient limestone millstone and an ancient water mill along the course of the nearby river Para Para. All this testifies to the ancient family tradition focused on the production of vines, olive trees and wheat.
