Terroir and wine making

Cerasuolo di Vittoria Classico Para Para is a blend of Nero d'Avola and Frappato grapes. The vineyards are cultivated on a stony ground, deep and poor in organic substance, originated from the course of a river that flows nearby. The grapes ferment in steel at about 25 ºC with continuous pumping over and fulling. Maceration lasts about 15 days and is followed by malolactic fermentation in stainless steel barrels where the wine remains for 18 months, to be then aged in French oak barrels for 8-9 months and in bottle for another 6 months.

Taste notes

Para Para Poggio di Bortolone is the perfect synthesis of the two varieties that in the glass give off intense and elegant aromas of red fruit, spices, toasted notes. On the palate the wine reveals its remarkable sapidity and a soft and delicate tannins.

Wine at the table

The strong and balanced character of Para Para goes well with mature cheeses, game dishes and elaborate fish dishes such as a tasty tuna steak.

Curiosity

The Para Para wine takes its name from the course of the river Para Para that flows near the vineyards of the property, where Poggio di Bortolone carefully preserves a nineteenth-century palm and a water mill along the stream.
