Terroir and wine-making

The Amarone della Valpolicella Classico DOCG Proemio Santi is made with Corvina, Corvinone and Rondinella grapes. The harvest takes place strictly at the end of September. The berries ferment for about 5 weeks at a controlled temperature. It follows a period of 24 months of aging in barrique and 12 months in bottle.

Notes of taste

In the glass, the Proemio Santi shows a ruby red color with garnet reflections. The nose releases sophisticated aromas including pepper and cinnamon, chocolate, tobacco leaf, red fruit even in jam. On the palate it releases pleasant hints of spices with softness and fullness. Overall, it is balanced, elegant and persistent.

The Corvina, Rondinella and Corvinone grapes used to produce the Amarone della Valpolicella Classico DOC Premio come from the best vineyards of the Santi winery, which are over 30 years old.
