Terroir and wine-making

Cellaro’s vineyards are located on slopes at an altitude ranging from 300 to 600 meters above sea level, in the territory of Sambuca di Sicilia, in the province of Agrigento. The Nerello Mascalese grapes used to produce the Quattro Borghi di Cellaro wine are enriched thanks to the intrinsic qualities of the terroir, particularly suited to exalting the natural qualities of the vine. The winegrowers of the winery apply cultivation and production methods that respect nature and the surrounding environment. Once harvested, the Nerello Mascalese grapes are subjected to the processes of destemming, criomaceration for 12 hours and soft pressing of the berries. The vinification involves a fermentation phase at a controlled temperature of 16°-17° C with a subsequent period of soaking on yeasts. The wine reaches an alcohol content of 14% and organoleptic characteristics.

Notes of taste

The Quattro Borghi Nerello Mascalese Cellaro colors the glass of a bright ruby red. Releases enchanting notes of pink fruit, oriental spices and pink flowers. It wraps the palate with fullness and the typical tannins of Nerello Mascalese, giving hints of red fruits. Definitely a fresh and elegant red wine.

Nerello Mascalese from Cellaro has the perfect red to accompany fish dishes, from starters to risottos and second courses. It does not disdain the combinations with meat and fresh cheeses.
