Terroir and wine-making

In the terroir of Sambuca di Sicilia, in the agro agrigentino, grow the grapes Nero d'Avola soul of the wine Quattro Borghi di Cellaro. The vineyards of the winery stretch on the slopes of the area, at an altitude ranging from 300 to 600 meters above sea level. Non-invasive and nature-friendly cultivation and production methods help to enhance the intrinsic qualities of the vine. The grapes harvested by hand are subjected to de-racking, 12 hours of cryomaceration and soft pressing of the berries. Fermentation takes place at a controlled temperature of 16°-17° C and involves a period of rest on the yeasts.

Notes of taste

Nero d'Avola Sicilia DOC Quattro Borghi Cellaro takes on the characteristic notes of the grapes vinified in purity: an intense ruby red color and a complexity of aromas that invite to an intense and full-bodied taste. An elegant and refined wine, a pleasant interpretation of the Sicilian grape.

Wine at the table

Like any good Nero d'Avola, the Quattro Borghi Cellaro loves the company of dishes with a strong flavor as the first to meat sauce, roasts and grilled and aged cheeses.

Curiosity

The Quattro Borghi di Cellaro wine line includes, in addition to the Nero d'Avola Sicilia DOC, three other wines that are an expression of Sicily: a Nerello Mascalese, a Grecanico and an Inzolia-Viognier, all recognized by the Terre Siciliane IGP designation.
