Terroir and wine-making

Each Firriato wine is made with grapes from vines planted in the terroir most suited to their nature. For this wine, Etna DOC could only choose fruits of Nerello Mascalese and Nerello Cappuccio that grow on their original volcanic soil. In the Cavanera Etnea estate, the manual harvest takes place between the second and third decade of October, when the grapes slowly reach their optimum ripening. In the cellar, the grapes are further selected before being pressed gently and then subjected to fermentation. The traditional vinification in red wine in stainless steel tanks is completed by a 12-month aging in Slavonia barrels that enhances the aromas for an intense and elegant result.

Notes of taste

Vibrant violet shades enrich the ruby red color of Le Sabbie dell'Etna wine. Its typically mineral scents leave room for nuances of red fruits, plum jam, black cherry, licorice, violet and black pepper. A harmony of scents envelops the palate, declining in an ever-stable, rich, lively and fine balance. A satisfying persistence ends in a juicy finale.
