Terroir and wine-making

The Amarone della Valpolicella Classico DOCG is made from vineyards with an average age of 40/50 years and exclusively from Corvina veronese, Corvinone, Rondinella and Molinara grapes. The grape is harvested in October with large wooden boxes, called plateaus, and is left to dry in the orchard for at least 4 months to gain a higher concentration of sugars. The aging takes place at 50% in barrique and 50% in large oak barrels for two years; after this period, the two types are assembled and bottled.

Notes of taste

In the glass, the Amarone Valpolicella is an intense ruby red with slight garnet hues. The nose is marked by hints of cherries and fresh fruit, while the palate explodes with a bold character with flavors of almonds and vanilla.

At the table, the chef’s advice proposes game, aged cheeses and red meats.

A Venetian specialty to accompany the Amarone della Valpolicella Classico DOCG is definitely the Pastisada, a typical dish of Verona cuisine based on horse meat, wine, verdure and many aromas. It is a long-cooking dish, so a good glass can also accompany the preparation of the meal.
