Terroir and wine-making

In the estate of Baglio Sorìa, in the agro of Trapani, the hot sun and the thermal excursions underline the innate qualities of the grapes Frappato, Merlot and Syrah that, let ripen on the plant for a longer period than usual, are enriched with flavors that make the Bayamore wine a concentrate of unmistakable aromas. The harvest is usually carried out in the first week of September, after which the grapes ferment for twenty days at a controlled temperature before the traditional maceration with skins. The aging in French oak barrels for six months and in bottle for three more, contributes to delineate a rich organoleptic profile responsible for the sensory friendliness of the Firriato wine.

Notes of taste

The intensity of the bright red color anticipates to the sight the strong character of this Firriato wine: Bayamore gives off intriguing aromas of small ripe red fruits; at the tasting it demonstrates its personality as a good Sicilia DOC red with concentrated and elegant tannins.

Wine at the table

Served in a slightly pansed glass at a temperature of 16 °C, the Bayamore red wine from Firriato is at its best, especially when accompanied by tasty starters such as meat ragout pasta, red meat seconds and aged cheeses.

Curiosity

Bayamore is one of the Firriato wines that has conquered the palate of one of the greatest international oenology experts: James Suckling, in fact, awarded the Sicilian red wine label 90 points.
