Terrorism and wine-making
An astonishing elegance.
The Brut of house Donnafugata is a White Sicilian Doc produced with grapes Chardonnay and Pinot Noir: an authentic interpretation of the island terroir. The Metodo Classico bubbly is born in south-western Sicily, between Santa Margherita di Belice and Poggioreale; the vineyards grow at an altitude of 500 meters above sea level and have a franco-clayey soil, with mild winters, windy and dry summers, and a strong thermal variation between day and night.
The farms include structures with spalliera with pruning in Guyot, while the grapes are harvested in wooden boxes, with careful selection of the clusters of Pinot Noir and Chardonnay. The production process is completed by fermentation in steel, refermentation in bottle and an aging of at least 36 months.
Notes of taste
The glass of the Metodo Classico Brut offers a straw yellow color accompanied by a peculiar olfactory experience: bouquet of bread crust, dried fruit and citrus nuances. In the mouth it illuminates its freshness and its pleasant complexity. The perlage is fine, harmonious and persistent.
Wine at the table
The specialties to accompany the Metodo Classico Brut Donnafugata are numerous, among them there are bruschetta of bottarga, vegetables in tempura, cold cuts and, in general, finger food aperitifs. A small bubble to be opened at the time of tasting, at a temperature between 6 and 8 °C.
Curiosity
The label of the bottle depicts an elegant, shining woman with a face that recalls great works like the Lady with Ermine. A mix of art, nature and culture enclosed in smile just hinted that hides a thousand facets to discover at the table.
