Fermentation and refinement	Facciamo macerare le bucce 2 ore per estrarre l’aromaticità della varietà. Successivamente, effettuiamo una pressatura soffice e selezioniamo il mosto. La fermentazione viene svolta in serbatoi di acciaio inox a bassa temperatura (16°).

Terroir and wine-making

The sparkling wine Brut Moltó Negre by Casa Rojo is born in the region of Catalonia, between Barcelona and Terranova, in the vineyards of Villafranca del Penedés. The sparkling wine is produced with Trepat grapes harvested in the second half of September. The refermentation and the presence of sugars and yeasts selected with the traditional "champenoise" method enhance its organoleptic qualities.

Notes of taste

The perlage of Moltó Negre is fine and persistent. The sparkling wine of Casa Rojo is characterized by the sweet aroma of strawberry accompanied by rich taste of pastries. The taste is long-lasting, pleasant and fresh.
