Terroir and wine-making

The ZIbibo grapes selected for the production of the wine Collezione by Barone Montalto family grow in the Valle del Belice, on dark alluvial and deep soils, of medium texture, with a silty clay-sandy composition and good organic matter content. The Mediterranean climate of these territories contributes to giving wine its typical characteristics. The vinification lasts 12 hours at a temperature of 4°C, the subsequent fermentation in steel has the duration of 20 days at 12-14°C; 3 months of aging with weekly bâtonnage follow.

Notes of taste

The Zibibbo Family Collection is shown in the glass with a straw yellow color crossed by green shades. Its pleasant scent precedes the harmonious sensations perceived by the palate, resulting more or less soft.

Wine at the table

The Zibibbo Barone Montalto can be enjoyed as an aperitif, but also to masterfully enhance the typical dishes of Mediterranean cuisine based on fish and crustaceans. Ideal to pair with aged cheeses, foie gras and many other tasty dishes.
