Terroir and wine-making

The Zibibbo Sicilia DOC Jasmin from the Firriato Sicilian winery is a white wine produced at Agro di Trapani, in the Borgo Guarina estate. The soil of the vines is a medium clay-like with cultivation of the vineyards on Guyot pruning spalliere. The grapes harvested during the manual harvest of late August pass a 20-day temperature controlled fermentation period, after which they start 3 months on the noble lees in stainless steel tanks.

Notes of taste

The Zibibbo Jasmin has a great aromatic capacity, a wine rich in taste and elegance, full of finesse and grace. The straw yellow of the tulip-shaped glass offers a floral nose, rich in citrus notes surrounded by jasmine nuances and Mediterranean notes. The palate is savory and harmonious, a fragrant taste and very sensual.

Jasmin Firriato is served with various dishes, sashimi and sushi, fresh cheeses, appetizers and fish dishes.

In the process of ripening the Zibibbo grape, the strong temperature variations between day and night give the wine its peculiar characteristics and an excellent balance between the olfactory and gustatory components.
