Terroir and wine-making

Cellaro’s vineyards, which house the Grecanico grapes, are located in the agro-agrigentino area of Sambuca di Sicilia, at an altitude ranging from 300 to 600 metres above sea level. The plant processing is carried out in total respect of nature and its intrinsic qualities: the Sicilian winery uses renewable energy sources and non-invasive cultivation methods. Once the harvest is done, the Grecanico grapes are subjected to destemming, 12 hours of cryomaceration and soft pressing of the berries. The vinification involves a controlled temperature fermentation of 16°-17° C with a period of rest on the yeasts. The wine reaches an alcohol content of 14% and acquires elegant and delicate organoleptic qualities.

Notes of taste

The Grecanico Terre Siciliane PGI from the Cellaro winery is a typical Sicilian white wine with a fresh and dry taste. The golden colour is characteristic of pure Grecanico wines; the olfactory range is enriched with hints of white fruit and aromatic herbs that accompany slight floral notes. Overall, it is an elegant and refined wine, certainly pleasant to drink.

Cellaro’s Quattro Borghi Grecanico accompanies all the fish dishes with taste, from starters to risottos and second courses. Great with shellfish.

Cellaro has always been committed to the enhancement of Sicilian grapes: the line of wines Quattro Borghi is dedicated to several native vines of the island, whose aromas are expertly enhanced thanks to the selection of the most suitable terroirs and the wise production methods applied by the winery.
