Terroir and wine-making
The Viognier grapes harvested to produce the wine of the Family Collection of Baron Montalto grow in the Valle del Belice, in Sicily, where the Mediterranean climate contributes to give them a characteristic flavor. The dark, alluvial and deep soils of medium-mass have a sandy silt-clay composition and have a good organic matter content.
Viognier grapes, a typical grape of the French Rhône valley, are vinified, as per long tradition, with film contact for 12 hours at 4°C and then fermented in steel for 20 days at 12-14°C. The aging lasts 3 months with weekly bâtonnage.
Notes of taste
The Viognier Family Collection is recognized by its bright golden yellow color. The nose reveals its intriguing complex and intense aroma, characterized by apricots, yellow peaches, white flowers, spices and honey. Also on the palate it confirms its sweet aromatic intensity with exotic flavors and an important harmonic acidity.
Wine at the table
The Viognier of the Family Collection particularly enhances raw fish dishes such as sushi, oysters, crustaceans and sea salads.
