Terroir and wine-making

The White Bayamore of Bianchi is a Sicily DOC made from vines Grillo, Inzolia Viognier in the estate of Borgo Guarini on a clay-loam soil with carbonate rocks. The grapes are harvested between the last week of August and the last days of September by Guyot pruning trellis. After a fermentation period of 10-12 days, soft vinification takes place at controlled temperature, followed by an aging for 3 months on noble lees in steel tanks. Finally, the wine is refined for 2-3 months directly in bottle.

Notes of taste

In the glass of Bianchi’s Bayamore Bianco coexist complex and enveloping expressions that enhance the final tasting. At the sight the wine appears with a straw yellow carved by green scratches; to the nose stand out tropical notes of white fruit along with slight citrus nuances and floral notes like jasmine and honeysuckle. In the mouth, the texture envelops the palate with excellent savoury, persistence and a marked personality.

The White Bayamore Bianchi bride at table fresh aperitifs, delicate appetizers with vegetables and fish dishes as a delicious fillet of sea bass.

Curiosity

The 2019 vintage is influenced by cooler and rainy seasons than the averages of recent years. The vegetative development of the plants was optimal, with perfectly functioning crowns that favored the increase in average quality.
