Terroir and wine making

The grapes used for the production of this Terre di Giumara are those of Inzolia, the oldest native Sicilian vine, which therefore has its natural habitat on the island. Once the grapes are harvested, it is passed to cryomacerazione in stainless steel winemakers at a controlled temperature of 4 ºC for 4-12 hours. The berries are gently pressed before the static clarification of the must. Fermentation takes place at a controlled temperature of 16-18 ºC for 20 days, while aging lasts 4 months in stainless steel and 2 months in bottle.

Taste notes

Inzolia di Caruso & Minini is characterized by intense and elegant aromas, the result of an ancient balance between the fertile and generous soil and the strong and resistant vine. The result is a crystalline wine with fruity and crunchy aromas, pleasant and finely delicate.

Wine at the table

By its nature, Inzolia Terre di Giumara is perfectly accompanied by traditional Sicilian dishes cooked with fish or vegetables. It also likes pairing with dairy products.

Curiosity

'Terre di Giumara' is also the name that the Caruso & Minini winery has given to the farm it owns: a way to pay homage to the indissoluble link between the vineyards, including Inzolia, and the land where they grow.
