Terroir and wine-making
On the estate of Cavanera Etnea, located on the slopes of the Sicilian volcano, Firriato grows white Sicilian grapes that best express the territorial identity of the region. A unique terroir, characterized by cold winters and mild climate that slow down the ripening process and give the beans rich Mediterranean aromas. The harvest is carried out during the second decade of October, strictly by hand. In the cellar, the grapes are gently pressed before fermenting at a controlled temperature. Three months of ageing on noble lees in stainless steel tanks perfect the interesting scents of Firriato’s Etna Bianco Doc.
Notes of taste
At first sight, the wine Le Sabbie dell'Etna Bianco Firriato shows a straw yellow colour with greenish reflections. A bouquet of mimosa and broom flowers enriched with nuances of white peach and ripe pear. On the palate, it reveals its rich and interesting texture that persists with savoury, fresh and fragrant.
